Fig Salami Appetizer
The Purple Onion restaurant in Saluda, North Carolina (in the mountains less than an hour from Pineapple Hill) has an out of this world fig salami appetizer. It’s not a meat dish, mind you. It’s dried figs, toasted walnuts, and a few secret ingredients formed into salami-style loafs shaped and aged several months before serving. Wow! They use black mission figs so that’s what I planted in with our grapevines, peach trees, blackberries, and persimmons.
